Rice the way Grandma kept it
In Japan, rice isn't a side dish — gohan means both rice and a meal. Every autumn the new crop, shinmai, arrives with its own little banner, and grandmothers will tell you rice is best in the weeks after it's milled, treated gently and left to rest before you lift the lid. That's the rice we want in your pot: Japanese short-grain, sealed tight so it reaches you the way it left the mill. The rice cooker does the rest. Grandma would approve.
